Decadent Mango Soft-Serve
Simple can be so delicious when it's done right! This soft serve is full of flavour and a much healthier option than traditional ice cream. It's just mangoes, with a splash of milk for a creamy finish. Ditch all the additives and preservatives found in many ice creams with this all-natural treat. No added sugars, little fat and plenty of naturally occurring fiber and vitamins from all that mango make this the perfect dessert, but it feels like more of a treat than just eating fruit. I enjoy this recipe with a variety of fruit year-round!
- Vitamix (or other similar high-powered blender) or food processor
- Ice cream scoop - try this one!
- 2 frozen atualfo mangoes, diced and frozen (they need to be pre-frozen for this recipe!)
- splash of milk (your choice - soy, almond, coconut, cow)
- Fresh lemon zest (for garnish)
- You'll need to have your mangoes chopped and pre-frozen for this recipe. I usually buy them when they're ripe and in-season and chop them, then freeze them into portions in ziplock bags. Don't freeze a whole bunch of mangoes together or you'll end up having to use them all at once, and this recipe really is best eaten fresh.
- Take the frozen mango out of the freezer and allow it to thaw for 5-10 minutes to soften (otherwise it's a REALLY tough one on the blender).
- After the mango has softened a bit, throw it in your blender or food processor, add a splash of milk (literally, all you need is a splash) and blend until smooth!
- Portion into bowls, garnish with fresh lemon zest, and enjoy right away.
Optional: Garnish with shredded coconut for a little tropical flavour.
*note: If you want it extra rich and creamy, use full fat coconut milk instead of milk. Start with just a little bit, taste it and add more if you like.
You can keep leftovers in the freezer if you like. I recently did this and brought them to a dinner party. To re-create the soft serve from frozen leftovers you'll need to let the ice cream thaw on the counter for 10 minutes or so, and then pop it back in the blender. You might need to add a splash of milk when you re-blend before serving it. It ended up working pretty well, even in my friends magic bullet!
Nutrition facts based on average serving of ~ 1 mango per person, which is plenty! This much can often serve 4.
- I definitely think ice cream is a worthwhile treat on the occasion, and am all for it. For those more regular after dinner sweet fixes, my vote is for a whole-food based treat most often.
- I find this is so flavourful just a little bit will do the trick, so I'd often end up having just a small serving :)
- Many ice creams have 250+ calories per half cup, including 10g of saturated fat and over 20g of added sugars per serving! As you can see, this one doesn't save you much in the sugar department assuming you're eating a whole mangoes worth, but you do get a bit or fiber and some vitamins along with the package. You'll also score in potassium and save in saturated fat, which is a bonus as far as your heart is concerned.
